Peach & Corn Salad
Simple, fresh and easy. This easy-to-make salad boasts farm-fresh ingredients filled with the taste of summer.
We love this salad because of the mixture of flavor components and textures: Sweet velvety peaches and crunchy corn, creamy mozzarella balls, sweet acidity from tomatoes, and a jalepeno kick at the end!

Ingredients
- 2 ears of corn, shucked and cooked (we roasted our on the bbq).
- 1 cup fresh cherry tomatoes.
- 4 ripe peaches.
- 1 cup mozzarella balls.
- 2 scallions sliced.
- Handful of fresh cilantro.
- Juice of 1 lemon.
- Salt and pepper to taste.
- 4 tablespoons of olive oil.
Instructions
- Slice corn off the cob.
- Slice tomatoes in half.
- Pit peaches and cut into bite size pieces.
- Toss corn, tomatoes and peaches together.
- Add mozzarella balls.
- Mix together scallion, cilantro and lemon juice.
- Whisk in olive oil, salt and pepper.
- Add salad dressing to salad and toss.
- Garnish with cilantro and peach slices.
