We are of course best known for our Sonoma Coast Chardonnay and Pinot Noir. We’ve also dazzled with sparkling wines, Sauvignon Blanc, and Pinot Gris. And we’ve surprised you with our Red Wine Nouveau and Marsanne Roussanne. For La Crema, thoughtful innovation means only releasing a new wine when the quality matches our dreams, our team absolutely loves it (including in blind tastings), and we feel confident our fans will love it too. Expanding our horizons by introducing the Sonoma County Cabernet Sauvignon doesn’t just mean our winemaking is entering a new chapter—it means you have an exciting new drink option. 

WHAT TO EXPECT FROM LA CREMA CABERNET SAUVIGNON 

Prepare to fall in love. “This Cab brings you an approachable mouthfeel, supple tannins, and elegant aromatics,” says our winemaker Lisa Valtenbergs. “It’s fruit-led and oak-supported, but not oak-heavy.” The bouquet is brimming with red fruit, cocoa nibs, and chai spice. The palate is balanced and harmonious, and will continue to evolve beautifully over the next 5 to 10 years. This Cabernet is perfect to enjoy immediately, so consider it a bonus that you can also age a few bottles into further complexity for a future occasion.

The decision to add a Cabernet to our portfolio wasn’t undertaken lightly. We’ve heard enthusiastic requests from La Crema fans for many years. You love Cabernet and wish we made one! Cabernet Sauvignon’s popularity is undeniable, with its powerful structure and ability to bring out the best in richer foods —yet also impressively hold its own when you’re just sipping and socializing. Our new Cabernet Sauvignon stays true to our commitment to producing approachable, fruit-forward, sustainably farmed wines that reflect the beloved characteristics of the grape and its growing region, while also bringing a fresh perspective.    

OUR WINEMAKING APPROACH 

An exceptional winemaker and joyful, down-to-earth presence on our cellar team, Lisa led the creation of this wine by drawing on her deep experience working with Cabernet Sauvignon grapes in Sonoma County. She has a track record of producing critically acclaimed Cabernets and this new wine shines under her deft touch. With a philosophy grounded in gentle fruit handling and minimal intervention, Lisa blends traditional techniques with contemporary practices to craft a wine that is both refined and expressive. She utilizes lighter toast profiles on our French oak barrels, lower fermentation temperatures, and reduced pump-over times to ensure a more inviting wine. Our Sonoma County Cabernet Sauvignon stands out thanks to our distinctive vision. We’ve infused our Pinot Noir philosophies into this Cabernet, resulting in a gentler, more enticing wine. By combining mountain and valley fruit, adding a touch of Merlot for softness, and applying delicate vinification techniques, we’ve created a Cabernet that’s approachable yet complex.

The Cabernet Sauvignon is sourced from sustainably farmed vineyards in renowned Sonoma regions including Alexander Mountain, Alexander Valley, Dry Creek Valley, and Bennett Valley. This new wine exemplifies our unwavering commitment to both the land and the art of winemaking. Every wine we produce is tended to with a personal touch that combines the best of traditional winemaking techniques with a contemporary California style. Our partnership with a stave mill in France gives us exceptional quality control over the small barrels we age the wine in.

PARING SUGGESTIONS AND SERVING TIPS 

Enhance your eating experiences by pairing our Cabernet Sauvignon with classic favorites like steak frites or hearty pasta, or get creative with lamb kebabs and spicy Moroccan tagine.
